Here’s another allergy friendly Christmas treat – Michaelmas pudding, dairy and wheat free, and gorgeous.
1/3 tin sweetened chestnut puree
4 oz finely grated carrots
2 medium eggs
6 oz gluten free all purpose flour
4 tsp baking powder
Squirt of honey to taste
1/2 tsp ground ginger
1 tsp ground cinammon
1/2 tsp vanilla essence
Mix up all the ingredients. Put into a greased souffle dish and cook on full in the microwave for about 6 minutes until it has puffed up and is cooked through. Remove pudding from souffle dish and serve in slices topped with Oatly cream.
